White Bean Chicken Chili


Some people have it a tradition to eat chili on Halloween night.
I was just talking to my sister, telling her about this yummy recipe I have for White Bean Chicken Chili. My friend Brandy gave it to me and I improvise with what I have. I served it at a ward Progressive dinner and it was a huge hit. We like to make a lot and freeze it in quart size ziplock bags.

White Bean Chicken Chili
3-4 C. chicken stock (I just boil 4 chicken breasts in water with celery, carrots, and onions with a little bit of salt)
1 C. salsa
2 Cans white beans (leave the juices in) I think they are northern beans
1 clove garlic, minced
2-3 C. shredded chicken (I just take the chicken out of the boiling water after 20-30 minutes and chop it up and add it back in)
Pepper
corn tortilla chips, finely chopped (I think the chips make the soup)It adds so much to the taste.
You can also add shredded cheese in it. To make it spicy you could add pepper jack

Garnish with more cheese, chips, corn bread, sour cream, etc.

De junking




Those of you who know me know I like to get rid of things. I guess you would say I am the opposite of a hoarder. The other day we shredded documents that we didn't need and filled a huge big size garbage bag. Our filing boxes look so nice and organized now. As you can see I was in my robe. I like to do all my cleaning for the day before I get all ready for the day. Lilly and Ethan are also stuffing their mouths with dried fruit. Ha Ha.
I have been cleaning my office too. It feels so nice to get organized. I'm hoping that some how getting all my deep cleaning done will bring our baby sooner. We still haven't been picked by a birth mom, but realize Heavenly Father will make it happen when it's suppose to.

Quick Runthrough



Soccer Season is over for Byron. :( :) This year Byron has played Spring and Fall Soccer. He enjoyed it and even made a few goals in the Fall. His favorite thing was to play goalie. He doesn't get that from me. I hate playing goalie! I have always enjoyed playing half back or forward. Byron gets better every season he plays. In the spring Ethan will be able to play. He is pumped!

The other day we got a call from my mom saying my Uncle Greg was going to come stay the night and he had his Llamas with him. We weren't sure what to do about the Llamas just because we live in a residential area. When he got here we just decided to put them in our backyard. He had these stakes that just went right into the ground. Our kids loved them. Llamas are actually a really cool animal! It was so funny to look out in our backyard and see two llamas out there. That night it got really windy, but they did just fine. I'm sure they are used to all sorts of weather. It was great to talk with Uncle Greg. He travels all over and has experienced so much in his life.

Brigham City Utah Temple!



This morning I turned on Conference and heard President Monson Announce that they were going to build a temple in Brigham City. I started balling and ran upstairs to tell Wes. It is such a struggle to try to get to the temple. Even though the nearest temple to us is just a 1/2 hour away. When we arrange for a babysitter, they have to be hear at least four hours. This will be such a blessing to us. That just made me so thrilled!
